About Domaine de l’Apollin
When one thinks of Jurançon, it is easy to picture after-dinner cheese plates and singular sweet wines. Yet the region has also become one of the most exciting sources of new-wave white wines in France. Florent Foury, the winemaker behind Domaine de l’Apollin in Jurançon, is a young and vibrant addition to the region, crafting wines that mirror his own energy and drive.
Producing his first vintage in 2023, Florent farms 3.6 hectares across four different plots tucked into the foothills of the Pyrenees. After three years working alongside rising Jurançon icon Jean-Baptiste Semmartin of Domaine Lajibe, as well as Michel Autran in the Loire, Foury established his Domaine according to the principles of natural viticulture. Shaped by a terroir of striking contrasts — Mediterranean breezes and high-altitude slopes — Domaine de l’Apollin captures this regional tension by crafting wines that walk a fine, balanced line.
Driven by a commitment to low-intervention winemaking and respect for nature, Florent uses biodynamic farming practices and manual harvesting across the entire Domaine. He relies on spontaneous fermentation with indigenous yeasts and no additives, allowing all the wines to remain on their lees until bottling. Using no filtration or fining, minimal sulfur is added at bottling according to the needs of each wine. As Domaine de l’Apollin continues to grow, with Florent adding new parcels every year and expanding his production, he remains steadfast in his commitment to creating terroir-driven wines that are slowly reshaping the legacy of what Jurançon means. These wines are full of place, character, and the future couldn’t be brighter.
